Lard Sausages (Isterband)

Lard sausage is a common sausage in Sweden. The most famous one is ‘Småländsk Isterband’. This lightly smoked sausage can either be sautéed or baked in the oven. The skin often cracks and the coarse filling falls out. Lard sausage have a slightly sour taste and go well with potatoes or cauliflower stew, horseradish and beetroots. The sausage can be made of pork and beaf, barley grain and potatoes.
