Mussels Gratin

One summer, when I was a teenager we rented a cottage for a week’s vacation on an island. I think the weather was great because I remember I got badly sunburnt. As the water was just below the house we could go swimming any time. My brother, who was and still is into animals was exploring the water life, snorkeling. One day he found a group of mussels and decided to pick some for supper. (I would not recommend to pick them your self. The mussels can be poisoned by the algae they eat). This must have been my first time eating them fresh. My mother did a great job. It was simple and just fabulous.

about 30 mussels
400 ml (1.7 cup) white vine
½ red onion
garlic
few lemon peels
parsley

First you have to clean the mussels. Don’t use mussels that are open or damaged. Chop the onion into small pieces and sauté with some olive oil and chopped garlic. Add the parsley, lemon, salt, pepper and lastly the wine. Heat up before you add the mussels. Let the mussels boil under a saucepan lid for a few minutes. They are done when they have opened. Lift them out and reserve the liquid (that can be used for a soup). The mussels that did not open you have to throw away. They were probably already dead when you started.
Of course you can do only this part and serve the mussels with bread and white wine.

about 100 g (0.2 lbs) butter
3 cloves of garlic
parsley
salt and pepper
breadcrumbs

Prepare the mussels and boil them as I described above. Mix the butter with crushed garlic, parsley and a little salt and pepper. When the mussels have cooled down discard the top half of the mussel shell. Divide up the butter on each mussel. Spread some bread crumbs over. Bake the mussels in the oven at 275°C (550F) until the mussels are golden brown (5-8 minutes). The butter should have started to bubble.

Serve them immediately with bread and dry white wine.

Almond Trout with Cous Cous Salad

Yesterday I walked by the local fish shop again. This time I bought some lovely trout filets. In the winter I often buy the whole trout and bake it in the oven. Now in the summer heat I wanted something that I could fry quickly so I didn’t have to stand by the hot stove so long. Well, this was so delicious that I was very close to going back there again for some more!

milled almonds ( I do that in our coffee grinder)
salt and pepper
butter
lemon

Mix the milled almonds together with some salt and pepper on a plate. Turn the fillets in the mix before you sauté them with a big spoon off butter.

We had them with lemon and a simple cous cous salad.

3 parts olive oil
1 part balcamic vinegar
mustard
1 glove of garlic
thyme
salt and pepper

It was great!

Fresh Shrimps with Lime

Some days ago we went into our favorite fish shop. We were actually supposed to have beetroots with goat cheese but as we are afraid our fish shop will close down we just had to support them. Oh well… we found some nice raw shrimps and some organic shampoo (as they have other things too) and went home.

Years ago I had a similar dish together with my cousin in Spain. Then we were sitting outside and fried the shrimps directly on a table cooker. Instead of lime we used lemon. This was not bad at all. Either then or now!

garlic
chili pepper
fresh lime

Heat up the olive oil and add chopped garlic and the chili pepper. When the garlic starts to get golden brown add the shrimps. Fry them quickly and serve them with finger salt and a slice of lime.

The shrimps are great as a starter with some cold white wine. They are also great with fresh pasta. Use the fry-juice from the shrimps together with cream. Add some salt and pepper, white wine and fresh herbs (such as dill, thyme). When the sauce start to boil, lower the temperature and add some Parmesan or other similar cheese. Poor the sauce over the shrimps and serve it with pasta and lime.
